Taco Mac Casserole- A Recipe!

I found this recipe on Pinterest and it seemed like something my hubby and I would LOVE! Hello, I mean, macaroni and cheese and tacos, all in one?!? Sign me up. And it is so simple to make, definitely something I'll be serving again.

1lb ground beef
1 packet taco seasoning (prepare according to package directions)
1 box macaroni and cheese (prepare according to package directions)
1/3 cup sour cream (I used less because I HATE sour cream, so it's up to you)
1 cup shredded cheddar cheese (I used way more then 1 cup)
1 cup salsa

Brown ground beef in skillet, drain grease. Add taco seasoning and make according to package directions.Meanwhile, prepare macaroni and cheese.
 

Stir in sour cream to the macaroni and cheese. (My husband loved the sour cream in mac n cheese part. Me? Not so much. But once it's all put together, you can hardly taste the sour cream at all)


 Spread half of the macaroni and cheese on the bottom of a 2 quart baking dish. Top with meat and sprinkle lots of shredded cheese. Add second half of macaroni and cheese. (I forgot to add the second layer of mac n cheese! haha! but I put it in when I added the salsa layer and it still tasted fine.)

Cover and bake at 400 for 15 minutes. Meanwhile, take the time to clean up the kitchen a  little, read the Hunger Games... whatever your little heart desires. Remove foil and spread salsa over top. Sprinkle remaining more shredded cheese over the salsa layer. Bake an additional 5 minutes or until cheese is melted.


It looks so good!!!


Okay, it looks a little funny on the plate, but I promise it's worth a try!!!
